We went to a Christmas market in Valkenburg, Netherlands last weekend and had a treat we haven't had in a long time (for whatever reason): poffertjes. These are the tiny, yeasted Dutch pancakes, cooked in a special cast-iron griddle and slathered with butter and powdered sugar. How can you go wrong?

I have a cast iron poffertjes griddle that I have never used, of course. I will make it my goal that any other posts on poffertjes will have to involve 1) me actually using the griddle for something other than as a trivet for the table, and 2) a poffertjes recipe. Stay tuned!

I boiled a sealed can of sweetened condensed milk for 2+ hours. Mmmm!

Whoa, poffertjes and cajeta sound like sweet perfection. I might not be able to handle it!

I still have to do the boiled can of condensed milk trick. You are living proof that it doesn't explode in your face, so now I'll definitely have to try it out!
