Waffles, not shortcakes

The Belgians are onto something. Everywhere in Brussels you see people carrying around little plates of luikse wafels with strawberries and whipped cream on top. Messy and delicious. I bought some fresh strawberries the other day and decided to recreate this favorite street food. I usually make biscuits for strawberry shortcake, but for me, this is an even easier dessert because, naturally, I almost always have waffle batter on hand. Not to say I dislike shortcake; in fact, I love it. I just love waffles more.

Strawberry Cream Waffles
serves 4

For the strawberries:
2 pints fresh strawberries
3 tablespoons sugar
a pinch of sea salt

For the whipped cream:
1 cup heavy cream
2 teaspoons vanilla
1 tablespoon sugar

Also your favorite waffle recipe

  1. Quarter the strawberries, and take 1/3 of them and mash with a fork. Combine the mashed strawberries with the quartered strawberries and sprinkle with the sugar and salt. Allow to macerate for about a half hour.
  2. Preheat your waffle iron. Prepare the waffles as directed and keep warm in a 200-degree oven.
  3. Place the heavy cream, sugar and vanilla in a stand mixer. Mix on low speed until bubbles form, then raise the speed to medium-high. The cream will start leaving a path. Continue mixing until the cream is light and airy, but make sure not to mix too long or you'll end up with butter.
  4. Plate the waffles and top with the strawberries and whipped cream.

Easiest dessert ever!

hello Sheryl! I love belgian waffles!!! Your straberry waffle looks so delish, though I am not much of a straberry and whipped cream fan. Do you have a recipe for chocolate waffles? or something with bananas and walnuts/almonds? ;P

Hi Sheryl!
Love your site dedicated to one of my favorite foods. My family and I just returned from living in Belgium, My 1 yr old has been asking for days for waffles, so we are making some today!
I wanted to make a small correction on your blog on the Belgium waffle. The recipe you have here is actually for what the belgiums call the "belgium waffle"!
The Luikse Wafel is the most comman waffle there.. and is quite different- actually made with a special king of sugar called "parelsuiker" or "sugar pearl" which are clumps of sugar. I'm not sure where you can get some here in the states.. but it is worth hunting it down! Here is a recipe for the Luiske Wafel- you really should try it- they are delicious and unlike anything you have ever tried!!
LuikseWafels

Ingredienten:
750 g patisserie flour (pastery flour)
270g lukewarm milk
70g fresh leaven (yeast)
3 eggs and 2 egg yolks
Snuiffje salts (pinch)
½ small pocket vanilla sugar
400g soft butter or margarine
500g pearl sugar

Prepare the paste with all ingredienten, except butter and pearl sugar. Let rest 30 minutes . Work already the kneading gentle butter in the paste and with pearl sugar. Divide in servings of 100g and let paste rest 10 minutes. Make sure your waffle iron is preheated. Cook time: 3 minutes.
Waffle iron does not have be greased

Eat hot off the iron or can freeze too!!
