I agree,
I spent 3 years in Japan where the custom of tipping is considered rude and a slap in the face to the server. What we need to do is stand up to the restraunt service and tell them to cut into their profits and pay their people minimum wages. That way, if a server deserves a tip (also known as gratuity, or graditude) for a job well done, then we can give them the extra.
Odds are you will never get the food service industry to jump on board. The servers enjoy the tax free income, and don't think they report it to the IRS, and the restraunt loves the profits.
